High-Pressure Food Processing Machine (HPP System) – Wave 6000/55
This high-pressure food pasteurization system (HPP) is a unit designed for batch processing of packaged food using hydrostatic pressure. The machine is fully operational, well maintained, and suitable for research, product development, and low-to-medium volume industrial production.
High-pressure processing (HPP) offers significant advantages for food manufacturers seeking to improve product safety, quality, and shelf life without the use of heat or preservatives. By applying up to 600 MPa of hydrostatic pressure to already packaged products, HPP inactivates harmful pathogens such as Listeria monocytogenes, Salmonella, and E. coli while preserving the natural taste, texture, nutrients, and color of the food. This makes HPP an attractive technology for clean-label formulations. In addition, the process typically doubles or even triples the shelf life of many refrigerated foods, reducing waste and improving distribution flexibility.
